The line of sweet potatoes on my kitchen counter top were dying to be devoured and I was feeling creative but not too creative. What I love to do is take a traditional recipe and gussy it up, so I did just that with my sweet pots.
- sweet potatoes
- other potatoes
- vegan sausage of your choosing
- thyme, oregano, or whatever your herb of the day is
- flour, cornstarch, or whatever thickener you prefer
- non-dairy ‘milk’
- salt and pepper
Slice up the potatoes, onion, and sausage. Arrange them in a baking or microwavable dish. Mix the minced garlic, herb, thickener, non-dairy ‘milk’, and salt and pepper. Pour that on top of your potatoes. Microwave or bake until potatoes are soft all throughout.
Note: I totally didn’t realize that I had accidentally purchased sweetened almond milk and that was all I had when I made this. I was worried it would completely ruin the dish but that little bit of sweetness was pleasant.
