rice and lentil soup

Awhile back I figured out how to make this soup. I love the nutrition and taste of this soup! I hope you do, too!!

rice and lentil soup

  • 1 cup lentils
  • 21/2 cups water
  • 2 Tablespoons soy sauce
  • 1 bay leaf
  • 2 carrots, chopped or sliced
  • 1/2 cup green onions
  • 2 cloves garlic, crushed
  • 2 cups water
  • 1/2 cup tomato paste
  • 11/2 tablespoons dried parsley
  • dash pepper
  • 1/2 teaspoon basil
  • 1/2 cup washed, uncooked rice
  • 2 teaspoons Tabasco (optional)

Combine lentils, water, soy sauce, and bay leaf in a large pot. Bring to a boil, cover and simmer for 20 minutes

Add remaining ingredients to the pot, except Tabasco. Bring to a boil and simmer for 20 minutes or until rice is cooked.

Add Tabasco sauce to taste.
