chocolate surprise

This is a dead easy and amazing recipe! It’s like magic for a newbie to baking. It was the first recipe I made from scratch as a child. You can easily adapt this to be a Butterscotch surprise by removing all cocoa and replace the sugar in the base with 1/3 cup white and 1/3 cup brown.

  • 1 cup flour
  • 2 teaspoons baking powder
  • salt
  • 2 Tablespoons cocoa
  • 2/3 cup sugar
  • 1/2 cup soy milk
  • 2 Tablespoons margarine
  • 3/4 cup coconut
  • 1 teaspoon vanilla

Beat together sugar and margarine, stir in coconut and vanilla. Mix in the dry ingredients and milk. Place into greased pan and sprinkle this topping over:

  • 1/2 cup brown sugar
  • 1 Tablespoon cocoa
  • 1/2 cup white sugar
  • salt

Pour 11/2 cup boiling water over the filled pan and bake for 30-40 minutes at 350F.
